Sometimes I like to try out a new restaurant. Other times, I want to go old school. One of those old school places I like is Al Moro. It is, as I like to say, quite civilized. It is also, however, rather particular; food guru Katie Parla has some tips on what to expect here. Reservations are essential. As are very polite greetings to the proprietors when you arrive and an effort to dress nicely. Although located in the extremely tourist-filled area near the Trevi Fountain, this is not a tourist restaurant.
Enter on the quiet side street, Vicolo delle Bollette.

Inside, there are a few rooms, all filled with art and photos.

Since you are in a classic Roman restaurant, go for their classic dishes. When in season, I start with a Roman artichoke.

From there, it’s the spaghetti alla Moro, their special version of carbonara with red pepper flakes. It’s delicious.

From there, we move on to some protein.

They are famous for their Montblanc (how old school can you get?) here, and the chestnut purée and whipped cream dessert is well worth the calorie splurge.

Then at the end, a perfect little coffee.
